Why This Works

Breakfast is the easiest meal to make plant-based. This burrito is filling, protein-rich, and takes 5 minutes.

Ingredients

  • 1 large tortilla
  • 1/2 cup black beans (canned is fine)
  • 2 scrambled eggs (or tofu scramble for fully vegan)
  • Handful of spinach
  • Salsa
  • Hot sauce (optional but recommended)

Instructions

1. Warm the Tortilla

Warm the tortilla in a dry pan for 20-30 seconds per side so it bends without tearing.

2. Heat the Beans

Heat the black beans in a pan or microwave. Season with a pinch of salt and a splash of hot sauce if you like.

3. Scramble the Eggs or Tofu

Scramble the eggs, or use tofu scramble if you’re going fully plant-based.

4. Layer the Filling

Add beans, eggs or tofu, spinach, salsa and hot sauce down the centre of the tortilla.

5. Roll It Up

Fold the sides in, tuck the bottom over the filling, then roll tightly.

6. Done

Eat it as-is, or put it seam-side down in the pan for 60 seconds to crisp the outside.
